A transition to passion
After six years in the audiovisual field for the University of Lorraine, Maxime L’Huillier decided to retrain in cooking, a long-standing passion. Having obtained his CAP and gained experience at “Comptoir Saint-Michel,” he seized the opportunity to take over the former establishment “Le Banc Iodé” to create Poulpo. “I love working with seafood and fish, and being located in the heart of the central market is a fantastic asset,” he confides.
The charm of the central market
The central market of Nancy offers a vibrant and friendly atmosphere. Maxime L’Huillier particularly appreciates this micro-village aspect, where vendors help each other and create a unique ambiance. “It’s like a living show every day. We work together, we help each other out,” he explains enthusiastically.
From stall to plate
As its name suggests, Poulpo highlights fish and seafood. The products used come directly from the Schaller fish market, located very close by. “Our dishes are served straight from the stall to the plate,” explains Maxime L’Huillier. This proximity allows for a flexibility that pleases regulars: “Some customers spot a sole at the fishmonger and ask us if we can prepare a sole meunière for them,” he adds.
An affordable and varied menu
With dishes priced between 13 and 17 euros, the menu at Poulpo changes weekly based on the seasonality of fresh products. “For example, we are currently in the mussel season,” the restaurateur indicates. This freshness and variation add to the appeal of the establishment.

The signature dish
Despite the variety, one dish remains constantly on the menu: octopus served with chorizo, a chimichurri sauce, and fries. This signature dish has become a favorite among regular customers.

Poulpo doesn’t stop at seafood. The establishment also offers a selection of natural wines that pair perfectly with the dishes. Maxime L’Huillier mentions that the start is promising: “We have many regulars who come back and hope to attract a young office clientele as well.”
