Best Cachupa Recipe

Cachupa is a traditional dish from Cape Verde, made with corn, beans, and various meats. There are many variations of this recipe, but here is a delicious and fairly simple version to prepare.

Ingredients

  • 250g of corn
  • 250g of beans (red, black, or pinto)
  • 500g of pork
  • 500g of beef
  • 2 Portuguese sausages (chouriço)
  • 2 onions
  • 2 cloves of garlic
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 tomatoes
  • 1 pinch of salt
  • 1 pinch of pepper
  • 2 tablespoons of olive oil

Preparation

  1. Soak the corn and beans in cold water for 12 hours.
  1. Drain the corn and beans and place them in a large pot with cold water. Bring to a boil, then reduce the heat and let simmer for 1 hour.
  1. Meanwhile, cut the meats into pieces and the sausages into slices. Chop the onions, garlic, bell peppers, and tomatoes.
  1. Heat the olive oil in a pan and sauté the onions, garlic, bell peppers, and tomatoes for about 5 minutes.
  1. Add the pieces of meat and the sausage slices to the pan and brown them on all sides.
  1. Transfer the contents of the pan into the pot with the corn and beans. Season with salt and pepper to taste.
  1. Let it simmer for an additional hour, until the meats are tender and the flavors are well blended.
  1. Serve the Cachupa hot with rice or bread.
