Ingredients: 1.2 kg of fish (ling, salmon, cod), 400 g of pink shrimp, 2 white leeks, 2 carrots, 200 g of Paris mushrooms, 40 g of butter, 40 g of flour, 200 ml of dry white wine, 1 vegetable broth cube, 500 ml of water.
STEP 1: In a pot, make a broth by heating the water with the vegetable broth cube until dissolved.
STEP 2: Thinly slice the white leeks and cut the carrots into rounds to add to the preparation.
STEP 3: Melt the butter in a frying pan, add the flour and mix to obtain a smooth roux.
STEP 4: Add the vegetable broth to your roux, stirring gently to avoid lumps.
STEP 5: Then add the white wine and let simmer on low heat for a few minutes.
STEP 6: Add the pieces of fish and the shrimp to the mixture and allow to cook on low heat until the fish is tender.
STEP 7: Incorporate the vegetables (leeks and carrots) as well as the mushrooms into the preparation and continue cooking.
STEP 8: Check the seasoning then serve hot, accompanied by rice or potatoes if desired.
