In the heart of the 1st arrondissement of Paris, the bar at the Mandarin Oriental offers a cocktail menu with spring flavors. Starting April 16, this exceptional menu is crafted by Alex Francis and Barney O’Kane, former managers of the famous Little Red Door, now consultants. This dynamic duo aims to combine French ingredients with Asian flavors, a demand dictated by the Mandarin Oriental group’s charter.

The “farm to table” philosophy adapted to cocktails

The menu, titled “Season: season”, features ten original creations. Drawing from their previous experience, Alex Francis and Barney O’Kane continue to favor a “made in France” approach. They collaborated with the micro-distillery Baccae, located in the 4th arrondissement of Paris, for the custom creation of a large part of the spirits. Other regional producers were involved, enriching the cocktails with local and authentic ingredients.

Flavorful and surprising creations

To start, the Mandarin is a welcome drink that combines mandarin liqueur, Picon bitters, Lillet blanc, and champagne in an elegant small flared glass. The complete use of the fruit, sourced from the Bachès estate in the Pyrénées-Orientales, ensures a unique tasting experience.

Next, the Rice is a highball whiskey featuring a rice-based spirit and a French sake produced by Wakaze in Fresnes, all garnished with a puffed and caramelized rice sheet. A powerful cocktail that highlights local ingredients like Camargue rice.

Cocktails for dessert lovers

Dessert lovers are not forgotten with the Custard, a cocktail evoking a liquid floating island thanks to a house-made cream liqueur. This cocktail is enriched with cognac and pineau des Charentes, all topped with a meringue.

Cocktails crafted with modern techniques

A large portion of the cocktails is pre-batched, a preparation technique that allows for even finer control over the flavors. This method, already widely used at Little Red Door, finds a new application here to surprise and impress even the most discerning.

The future projects of Francis and O’Kane

Alongside their work at the Mandarin Oriental, Alex Francis and Barney O’Kane are preparing to open their own establishment on rue Saint-Sauveur in the 2nd arrondissement of Paris. A project that promises to continue exploring innovation and excellence in cocktails.
